Wine tenderizes and adds moisture to food, as well as imparting a deep, complex flavour. No other single ingredient has quite the same power to affect our cooking as wine does. This seminar explores the many ways in which wine is used in contemporary cooking. In my own kitchen, wine is prized not only for its ability to complement food at the table, but for the magical qualities that it contributes to the finished dish. Wine, with its complex combination of sweet, sour, and bitter, and its generous offering of flavours is truly a magical ingredient and can be either simple or sublime. After this seminar, you won’t be able to imagine your kitchen or your table without it.
